Pantry Potluck: Banana Muffins

Bananas are one of those fruits that if you find a song or quote about it, you may be better off just sharing the recipe.

Banana Walnut Chocolate Chip Muffins

We usually have banana bread or muffins when we have really ripe bananas that no one wants to eat fresh anymore. The trick is to get them before they get really over-ripened.  When needed, I find a good basic recipe  then modify the recipe based on what we have available.  We have lots of variations.  Sometimes they are wonderful and the variations become a new recipe.  Sometimes they need some fine tuning and well, I end up eating most of what I made.  Did I mention that I don’t like to throw away food? 

  • Potluck Main Ingredient: bananas
  • Pantry ingredients available: semi-sweet chocolate chips, walnuts
  • Pantry staples: flour, butter, sugar, vanilla, eggs, milk
  • Possibilities:  banana walnut chocolate chip muffins

Banana Walnut Chocolate Chip Muffins  


  • 1 1/2 cups mashed bananas (3 to 4 medium ripe bananas)
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, slightly beaten
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup milk (fresh, soy,  or reconstituted dry)
  • 1 1/2 cup flour
  • 1 cup walnuts (chopped or crushed)
  • 1 cup chocolate chips (semi-sweet, milk,  or dark)


  1. Preheat oven to 350 F degrees.  Prepare the muffin tin by coating with oil (or no-stick spray) or lining with baking cups.
  2. Add butter to mashed bananas. Mix well.
  3. Add sugar, egg, and vanilla extract. Mix well.
  4. Sprinkle the baking soda and salt over the banana mixture. Mix well.
  5. Add the milk. Mix well.
  6. Add the flour and mix just until combined.
  7. Fold in the walnuts then the chocolate chips.
  8. Pour the mixture into the prepared muffin tins. Bake for 20 to 25 minutes or until done.
  9. Cool before eating.

Makes 12 regular sized muffins
