Repurposed candied sweet potatoes

Sweet Potato Pie

One way to ensure that we have no more empty pots is to learn to use what is seasonally available and what we can afford to feed ourselves and those we care about. So we need some recipes, right?  Let’s kick this off with Pantry Potluck, our foray into using what we have in our pantries, fridges, produce basket, (you get the picture) to get what we need (and want) to eat.  Did I mention that we love food?   

  • Potluck Main Ingredient: candied sweet potatoes (or yams)
  • Pantry ingredients available:  pie crust
  • Pantry staples: flour, butter, sugar, vanilla, eggs, milk
  • Possibilities:  sweet potato pie  

Sweet Potato Pie

(remix from leftovers: approximate ingredient amounts, adjust to your taste)    

Ingredients:    

  • 3 cups leftover candied yams (butter, sugar and cinnamon added when cooked previously)
  • 1/4 cup brown sugar
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup milk (fresh or reconstituted from dry milk)
  • 1/2 teaspoon baking powder
  • 1 prepared pie crust (homemade or purchased)

Directions:    

  1. Preheat oven to 375 F degrees.
  2. Heat leftover sweet potatoes/yams in microwave for 3 minutes on high or in pot on medium low (gas or electric – stir frequently to prevent sticking) or in oven in ovensafe dish at 350 F for 20 minutes.
  3. Stir to smooth out lumps and mix potatoes well.
  4. Add brown sugar, nutmeg, salt and baking soda. Mix well.
  5. Add eggs and vanilla extract. Mix well.
  6. Add milk and mix well. OK if some lumps present in the mix.
  7. Sprinkle baking powder over mixture and fold into the filling.
  8. Pour filling into pie crust.
  9. Bake at 375  F degrees for 40 to 50 minutes. Center should be set when done.
  10. Cool for about 10 minutes.

Makes one deep dish pie or two regular pies.
